Castronovo was started by Denise Castronovo in Stuart, Florida. While Castronovo was only launched in 2013, Denise has made some strikingly different and exceptional chocolate that has won over twenty awards both nationally and internationally. Denise is the only woman-owned bean to bar chocolate company in the U.S that has won an award from the International Chocolate Awards! Denise picks heirloom varieties of cacao from remote regions that help to conserve the rainforest and highlight the exclusive flavors from those regions. Castronovo also ensures that the beans she uses come from plantations that naturally exist in the wild, or from small farms that practice sustainable farming. Denise is there every step of the way to ensure not only quality chocolate bars but ensuring that even the beans are carefully looked after. Castronovo decided to get into the chocolate making business after her original career as an ecologist and owning her own company that uses mapping technology to look at satellite imagery for ecological health slowed down in 2008. She purchased a bag of cacao beans, when it dawned on her that, that was the first time she realized where chocolate comes from. Actually, her own bars from her first batch was the first bean to bar chocolate she’s ever had! And the rest is history.

Collection description: Maya Mountain is arguably one of the most established cacao origins in the world, having been one of the first to very clearly establish its own brand. Started in 2010, MMC put Belizian cacao on the map, as a pioneer in the centralized fermentery social enterprise model. What that boils down to is 350+ farming families in southern Belize selling their wet cacao beans to the MMC team at a transparent premium. Most of these families are Q’eqchi’ and Mopan Maya and have been producing cacao for generations. In 2014, the origin was even awarded an Heirloom Cacao Preservation (HCP) designation, and its versatile and rich flavors attest to the deservedness of that honor. All Maya Mountain Cacao beans are certified organic.

Punta Gorda, the district capital, hosts a 3-day chocolate festival each May, which has helped build tourist interest in the region. Toledo is home to aroun 30,000 people from a wide range of cultures, including Creole, Mopan & Q'eqchi Maya, the Garifuna, Mennonites, and Mestizos; all of them rely primarily upon agriculture or fishing. Primary crops grown include beans, corn, coffee, yams, and plantains.
