Goodnow Farms

Goodnow Farms chocolate is handcrafted in Massachusetts. All the cacao they use is ethically sourced from small farmers and producers that Tom and Monica have met during their travels throughout Mexico, Central and South America. The cacao is carefully stone ground, and conched in small batches. They also press their own cocoa butter for each bar. They admired the concept of single origin bars and capturing the different taste profiles, and uniqueness through each bar. They discovered their love for real craft chocolate after visiting a vintage shop in Los Angeles. Tom and Monica officially created Goodnow Farms in 2016 but have been crafting their creations since 2008. The pair works hard to engage with the communities where they receive their cacao from to ensure farmers are fairly compensated and practice sustainable farming.

Tabasco, Mexico

The Mexican state of Tabasco is located in the southeast of the country, bordering the Petén department of Guatemala to the south. Most of the state is covered in rainforest, as well as lots of small lakes, wetland areas, and rivers. While the state's main industry is petroleum extraction & refination, there are several commercially-important crops grown in Tabasco, such as cacao, coconut, oranges, bananas, and sugarcane.

Hacienda Jesus Maria

This 80-year-old family farm is located in the Mexican state of Tabasco, a historic cacao-growing region known also for its sugarcane, banana, and coconut. The farm is made up of 70-hectares, 50 of which are cacao, and the rest of which are a mix of coffee, oranges, allspice, bananas, and grazing land. Farmer Vicente Alberto Gutierrez Cacep employs farming and processing practices which take into account the natural growth on his land, and he makes it a point to support community initiatives and local businesses.

A great higher percentage brown butter bar

I gave this as a gift (happily they let me try some too!) and it was well-received. Caramelly and complex with a little bit of nutty astringency, like walnut or almonds with the skins. There are sweeter brown butter bars if that's what you like (try the ones from Fruition and Creo!) but this is great if you like a good dark bar.
