Collection description: CAC Pangoa is a cacao co-op in the Junín region of Peru, with more than 700 contributing members. Pangoa originally focused on coffee beans, but in the decades since their founding in 1977, they’ve also become dedicated to preserving their land through the cultivation of cacao. With the help of the organization Conservation Cacao, CAC Pangoa is planting more & more fine flavor varietals of cacao to sustainably and safely replace their ageing coffee. These days, the cooperative only produces organic-certified Fair Trade cacao, and they’re starting to turn to it more & more as their coffee trees feel the devastating effects of climate change.

Collection description: Junin is a department in central Peru, smack in between the Andes Mountains and the Amazon Rainforest. Bordered in the west by the Peruvian capital, Lima, Junin has a mix of industries and climates; its agricultural & mining sectors have become integral to Lima’s economy in recent decades. Heavy metal mining and processing have begun having serious effects upon the surrounding communities, however, so agriculture is seen as having a more promising future. In Junin’s mountain valleys, farmers tend to grow local crops such as potatoes and corn, while the more tropical regions are home to coffee, precious woods, and a variety of fruit production.

Collection description: Qantu, based in Montreal, was started by Elfi and Maxime in 2016. This pair fell in love with bean to bar chocolate after researching cocoa after their first plantation visit in 2014. The immense passion and pride of the cocoa producers inspired them to create bean to bar chocolate. Qantu focuses on Peruvian cacao for the moment, which is where Maxime and Elfi met over a decade ago in Elfi’s home country.The name “ Qantu” (pronounced “Kantu”) derives from the name of the national flower of Peru and Bolivia. The word comes from the native language of the Peruvian Andes, Quechua, it represents a symbol of unity and hospitality.
