Based in Vietnam, Belvie Chocolate is a bean to bar maker that handcrafts their chocolate bars with Belgian techniques. They source cacao from all over Vietnam, then stone grind and produce their chocolate in small batches. Their award winning chocolate also contributes to the preservation of cacao trees in Vietnam. They take the husks of the cacao as fertilizer for the trees to help maintain a green environment. Belvie uses Trinitario cacao beans only from local farmers to help restore cacao trees throughout Vietnam and mostly importantly, to help support the farmers.

Tien Giang is one of the southernmost provinces of Vietnam, located just south of Ho Chi Minh City in the Mekong Delta region. Within Vietnam, the province is famous for its large and varied agricultural sector, home of the headquarters of several large fruit brands and producer of nearly 1.5 million tons of fruit each year. Tourism is important to the region, but the local government is aiming to look beyond the lush rice paddies to develop the land further over the next decade, exploiting every bit of greenery they can.

Probably my favorite Belvie bar. Trancendental, like tasting golden light. (I am aware how high that makes me sound.) Mellow medicinal - almost mint-like aroma. Rich, glossy, fluid texture. The subtlest fruit and toasted nut supporting a ridiculously stunning honey flavor with a lingering and nuanced herbal aftertaste.

Nice sweet complex flavor

The first taste I had this was FANTASTIC. Quickly leaping to the top of my favorite chocolate bar list. It has a nice sweetness to it with a burst of fruit and no earthyness. The second time I tried it, it was still delicious, but not as fantastic. I am hoping this is because I had just had some chicken with onions, likely throwing off the flavor palette, but TBD until I try it a third time. I definitely recommend savoring this bar with small bites that you take the time to have melt on your tongue to get the full experience.
