The honey in this bar comes from their good friends at the beautifully named You're A Honey. Their bees forage amongst native Manuka in the Western ranges of Nelson, producing honey with an incredible flavor due to the whopping 83% pollen count. They've paired the honey with their single origin Peru 66% to make a chocolate with full honey flavor and a little fruit, balancing out the sweetness with bitter, crunchy cacao nibs.

Hogarth Chocolate is a small craft chocolate maker in Nelson, New Zealand. The founders Karl and Marina started making chocolate after Karl was inspired by craft chocolate after a trip to South America when he tasted pure cacao for the first time. Karl was inspired by the true flavors of chocolate is capable of. Their chocolate hobby evolved into a business so Karl could spend more time at home with his family, a completely different direction from his 20 years of former seafaring life. Karl tinkers with and makes machines to make the chocolate making process more efficient and precise. The team at Hogarth is always on a mission to find new inspiration from the world to be transformed into their next chocolate bar.

Norandino Cooperative

Founded in 2005, the Cooperativa Norandino represents more than 7,000 families producing cocoa, coffee and panela across the north of Peru. Its mission is to improve the livelihoods of its member families by offering access to local and international markets. The cooperative is large by Peruvian standard, but it’s driven by its core values of transparency, equality, respect, responsibility, democracy and quality. All of Norandino's producers are Organic- and Fairtrade-certified, but because it represents cacao producers from so many regions of the country, chocolate makers are able to source Norandino cacao based on area of cultivation or even type of cacao. This allows makers to invest in a sustainable and equitable system while still maintaining control over their unique flavor proposition.

Honey flavor was more subtle than I’d hoped. I love Manuka honey, but the flavor was hard to detect other than a slight sweetness. I agree with others that I didn’t encounter nibs until a few bites in, but the nibs did add a nice crunch & slight bitterness. Good bar overall, but I wish the uniqueness of the Manuka honey came through more strongly.

This bar reminds me of dusk. The honey is the brightness of sunbeams still stretching between the growing shadows of dark cocoa nibs.

When you get bubbles free of nibs, it is smooth and nearly silky.

If you take a whiff from the open package, you might get notes of vanilla rooibos 🌿

The combination of sugar and honey in this origin creates a unique, aromatic sweetness. I get orange blossom 🌸🍊 and some other floral note I can't quite place. Maybe cherry blossom? It fades into those fragrant, soft notes of vanilla rooibos again🌿

A favorite for sure! The crunch of the nibs was not too crunchy, and a nice compliment to the soft notes throughout the tasting.

Delicious honey taste, barely any cocoa nibs

Great snap, beautiful honey flavor. This bar is perfect for folks who prefer their chocolate on the sweet side! I would give it to people as means of converting them over to dark chocolate. I love the slightly coarse texture! They get dinged a star for the highly misleading "cocoa nibs" title... there's maybe 20 nibs sprinkled on the whole bar. Add more nibs or please be upfront about how sparsely nibbed this bar is.
