Soma was founded by David Castellan and Cynthia Leung in 2003. A rarity in the industry, Soma are adept at both chocolate making, and also a fantastic chocolatier. At the time, ‘bean to bar’ chocolate wasn’t necessarily even a term! Anybody who knew how to make chocolate were those who worked for big chocolate companies. Soma was one of the first to tackle the micro batch chocolate bar production. Besides their wonderful line of chocolate bars, Soma also uses their chocolate to make ganache for truffles, and other chocolate treats. Soma's high quality chocolate bars have been awarded multiple times over the years. First starting off in a 400 square foot tiny corner of an old whiskey distillery, Soma now has two chocolate factories in Toronto, Canada.

Why Don’t More Chocolate Makers Use Salt?

I’ve no doubt this bar would be excellent without the salt, but the salt elevates it. It’s from Soma, so it’s smooth, it’s creamy. It’s only 62%, so it’s not a super dark bar, but the sweet, the salty, the cocoa, and the fruit all dance together beautifully. And the artwork on the packaging is great, too. I make papercutting things (art?), and I always save Soma’s packages for them.

Soma never disappoints. The price point is higher but wow it makes sense why. My first high end bar was a soma and I could never quite go back to my previous version of good chocolate. If you love sea salt like me the balance of salt and smooth is fantastic. The cover art is Georgeous and any special guest that loves dark chocolate and sea salt would enjoy getting this on their pillow.

A good salted bar

Soft and creamy mouthfeel (speaking strictly of the chocolate here, as there are grains of salt in the mix). Tastes a little fruity with notes of liquorice, malt, and cane sugar.

Starry Night Dark

Since the first time I saw this bar I felt in love with the innocent look of the packaging. It sounds so dreamy & magic. It is like a deep blue sky with thousend of falling stars. The twinkle of crunchy sea salt addiction from the Newfoundland Salt Company is amazing. It has a luxurious smell of sweet spicy bread mixed with cocoa & salty scents. Trinitario beans are slightly acidic with a strong chocolate taste, hints of forest fruits (known as berries from a bush like strawberry, blueberry, blackberry, dewberry), tabacco, nuts and caramel. So this bar truly shows all the distinctive trinitario aromas. At first it's so yummy and chocolatey. Then it shows its warm/smoke spicy-nutty profile like a thick slice of salty freshly oven baked bread with a generous amount of spreadable spicy choco hazelnut cream. The salt flakes are not predominant. Instead they improve the tasting experience by adding fizzy/crispy notes. I believe their addiction helps the sweet, juicy & tart taste of blackberry to show up at the end leaving a kind of fruity & sparkling aftertaste in your mouth.
