Friis Holm

Friis Holm is a multiple award winning chocolate maker in Denmark. A trained chef by profession, the founder Mikkel Friis-Holm has owned a restaurant, a bakery, and then became a distributor for Scharffen Berger chocolate in Scandinavia. This passion for chocolate evolved into a deeper interest, and lead to the formation of a chocolate company in 2008. Friis Holm has a very particular approach when crafting his bars. All of his chocolate bars are kept the same, from the origin, the bean type, roast and percentage, except for one key difference during the refining process; the number of times the cocoa beans are turned. Resulting in dramatically different tasting notes in the chocolate bars. Give Friis Holm a try and taste the experience for yourself!

Waslala, Nicaragua

Waslala is a town and municipality in the North Caribbean Coast Autonomous Region of Nicaragua. The country’s national revolution during the 1970’s and 80’s affected Waslala tremendously, as it was the location of many guerrilla fights. But these days Waslala and the surrounding areas are more peaceful, covered with vegetation, rivers and streams, and scenic views of the countryside. The fine flavor cacao from this region currently comes from the Ingemann group. It’s produced by a cooperative of about 150 farmers located in the nearby rainforest, which is the largest in Central America, second only to the Amazon Rainforest.

Friis Holm O'Payo Milk Sansho Pepper

Fantastic! This is my first Friis Holm tasting experience and I am fabulously impressed with his gourmet skills. It probably has something to do with the second development of flavors. On the palate, the intense and crisp honey-milk opening evolves in the most splendid lemon-lime flavored pepper entourage with a very subtle spiciness to it.The finish honks a powerful horn that wakes you up immediately: flavored grappa!

Unique Sansho chocolate bar worth the splurge

This was my first Friis Holm bar after reading about the chocolatier for years, and after finally being convinced that it wasn't just Bonnat re-packaged and marked up 2x in price. I was very hesitant because of the price, but the Sansho pepper note piqued my interest. This bar was well worth the price and did not disappoint - a unique flavor profile unlike anything I've experienced before. The texture reminds me of the cocoa butter forward Bonnat milk bars, but the flavor is decidedly modern and unusual. One of the best chocolate bars I've ever had.
