Collection description: Definite Chocolate is a micro batch bean to bar chocolate maker from Dominican Republic. By sourcing directly from local cacao producers, they use only high-quality single origin cacao, which they roast, winnow, grind, temper and mold into fine chocolate bars with the utmost care. As far as possible, Definite Chocolate uses only locally sourced ingredients to support the local industry and to give a touch of Caribbean feeling to every bar. All their bars are made naturally without any additives. Definite Chocolate was founded by Jens Kamin, who moved from Germany to the Dominican Republic to make his dream come true and become a chocolate maker. They are the first Dominican chocolate producer who won an international award, and that only one year after starting their business in 2017.

Collection description: A family of Swiss immigrants to the Dominican Republic planted Finca Elvesia in the late 1800’s, a sort of paradise within a paradise. The farm is located in the agricultural community of El Valle, in the Hato Mayor region, and stretches over more than 150 hectares. Since its inception, the farm has changed hands several times, but the quality of its cacao has remained consistently high. Today, Finca Elvesia is run by local cacao expert Ramon Lopez, with help from his talented deputy, Isidro Castillo, and a team of over three dozen Dominican and Haitian farmhands. The Finca currently grows cacao varietals brought primarily from Venezuela during the Dominican Republic’s earliest cocoa-growing days, in the mid 1600’s, making it a remarkable piece of Dominican agricultural history.
