Eye opener chocolate experience for me. One of the first high quality bar I tried and it pushed all the buton!
Amazing light brown colour. Strong and sharp snap. Rich cocoa nuances both sides and when u break it spreads light nectarine and nutty notes. Thanks to the ocumare beans you can detect a richest chocolate profile followed by more incisive floral and fruits notes. Also bitterness & astringency are higher compared to the elegant mildness of porcelana criollo . It's enough creamy. Cocoa and coffee aromas, slightly nutty, earthy. The finish is quite strong but less chocolatey: orange blossom aftertaste and grass. So it has a balanced mocha-like start thanks to the porcelana, followed by sweet nectarine and nuts. But the finish is completely driven by the ocumare beans giving a spicy zing aftertaste.

The Estación was originally founded in reaction to threats of extinction of the varietal, and the best way to maintain it is by maintaining their trees. The center’s working plantation is dedicated to the propagation and preservation of only the Porcelana variety, and even supplies seedlings to farmers interested in reviving the historic strain.
