Theo and Philo

Theo  Philo is a chocolate maker based in the Philippines. Theo and Philo prides on using local ingredients. It all started from Philo’s love of baking, and desire to use chocolate. He would always scour for special and different types of chocolate. Growing up in the Philippines, he was surprised no one was making bean to bar chocolate, after he first encounter with single estate chocolate. Cacao is grown in the Philippines but it was mostly used to make hot chocolate and exported. That’s when the decided to experiment with local cacao and see what good can come about! Along with their single origin plain bars, they have a collection of flavored bars that are inspired by the local Filipino cuisine. Theo is short for Theobroma Cacao, and Philo is derived from the Greek word which means love. Their goal is to create masterpieces with each bite of their chocolate, which is carefully crafted to capture the bountiful heritage of the Philippines.

Davao, Philippines

One of the smallest big cities in the Philippines, Davao City is affectionately known as both the cacao and durian capital of the country. In fact, often you'll see both fruit trees growing on the same plantations within city limits, yet due to large soil & cacao varietal differences, you'll find that the resulting chocolates taste nothing alike. The region is so widespread that there's even a citywide speed limit that makes a trip from one end to the other take nearly two hours without traffic!

Anamalai (Regal Farms)

This brand is known by many names, among them are Anamalai Hills, Pollachi, and Regal Plantations, all of which refer to the same family-run farm in southern India: Regal Farms. The land is spread over a few parcels in the area, all operated under the same organic & sustainable principles which make it so remarkable. Regal Farms’ owner and operator, Harish Manoj Kumar, has been growing cacao on the land since the crop came to the region in the early 2000’s. Several years ago, he & his brother-in-law decided to begin selling their beans under a premium label, taking steps to completely eliminate their reliance upon chemicals. In the years since, they’ve begun exporting their premium cacao to dozens of countries, beloved for its naturally sweet and nutty flavor.

Good bar with a bitter, earthy aroma. Tastes of honey and fudge with an earthy funk. A bit tannic.

Beautiful bar. It really impressed me. Delicate yet distinctive. Light raisin taste and dried fruit undertones. Think about raisins, dried figs, dates, prunes, and apricots. The finish is a persistent symphony of cinnamon, raisin, and deep cocoa soul.

Great Things Come In Small Packages

Some craft chocolate bars are fruity (even though they don't contain fruit...it's just the nature of the beans they're made with). Some bars taste nutty (again, even though there's no nuts). This 70% from Theo & Philo is FUDGY, which is my *favorite* flavor to find in a chocolate bar. I immensely enjoyed how rich and chocolate-y (again, think rich fudge!) the bar was and I wasn't the only one that thought so. (Bonus: This bar segments into little triangle shapes (for the most part), which is a fun change from either no segments at all, or standard little rectangles (etc). Next I want to try the Theo & Philo calamansi bar (they've got quite a few interesting inclusion bars!)

I agree with others that this bar is earthy. To be honest, I didn't really understand what that meant at first, but when I tasted this bar, it all made sense. Subtle fudge flavor. The bar is small but thick.

Sweet tasty bar

Excellent origin. The bar was sweet with notes of brown sugar and caramel.
