Like Cacao, Kumara originally came from South America, travelling west across the Pacific after being traded through the islands and landing in Aotearoa (New Zealand) with Maori.

In this chocolate they have used Kumara crisps from their friends Ned and Mina at Proper Crisps. Proper make their crisps using seasonally selected varieties, mostly Red Kumara (Owairaka), Gold Kumara (Toka Toka) and Orange Kumara (Beauregard).

They have paired the Kumara with their Peruvian criollo cacao which highlights the caramelisation of the crisps, adding caramel and fruit notes to a deliciously smooth Kumara Milk Chocolate.

Hogarth

Hogarth Chocolate is a small craft chocolate maker in Nelson, New Zealand. The founders Karl and Marina started making chocolate after Karl was inspired by craft chocolate after a trip to South America when he tasted pure cacao for the first time. Karl was inspired by the true flavors of chocolate is capable of. Their chocolate hobby evolved into a business so Karl could spend more time at home with his family, a completely different direction from his 20 years of former seafaring life. Karl tinkers with and makes machines to make the chocolate making process more efficient and precise. The team at Hogarth is always on a mission to find new inspiration from the world to be transformed into their next chocolate bar.

Cacao Region

Piura, Peru

Piura is a department of northwestern Peru, bordered in the north by Ecuador and on the west by the Pacific Ocean. Several rivers run through the province from the region’s mountainous zones, serving to keep the coastal plantations naturally well-irrigated and productive year-round. The region is the second most-populous in the country, responsible for roughly a third of Peru’s annual petroleum production, as well as a significant amount of its mining. Similar to the rest of the country, much of Piura’s agriculture relies upon commercialized crops, such as sorghum, rice, corn, and yucca, though an increasing amount of native criollo cacao is being cultivated throughout the region.

Norandino Cooperative

Founded in 2005, the Cooperativa Norandino represents more than 7,000 families producing cocoa, coffee and panela across the north of Peru. Its mission is to improve the livelihoods of its member families by offering access to local and international markets. The cooperative is large by Peruvian standard, but it’s driven by its core values of transparency, equality, respect, responsibility, democracy and quality. All of Norandino's producers are Organic- and Fairtrade-certified, but because it represents cacao producers from so many regions of the country, chocolate makers are able to source Norandino cacao based on area of cultivation or even type of cacao. This allows makers to invest in a sustainable and equitable system while still maintaining control over their unique flavor proposition.

Interesting and tasty bar!

Hogarth Chocolate is consistently high quality! Always a fantastic look to the mold, lovely texture and great flavors!
This particular bar with with Kumara (sweet potato) crisps and Peruvian cacao is made into a smooth textured chocolate that tastes
like a caramelized chocolate covered sweet potato. Yummy!

Soft snap, warm mouthfeel, creamy and smooth texture. Tasting notes: honey, sweet dried fruitiness such as apricot, giant Sicilian dates, and raisins, caramel, hazelnut praline (smooth not crunchy), savory sweet potato flavor. Unique and mouthwatering to say the least. Great job!
