Creating flavorful 100% chocolate can be elusive. We wanted to develop a pure cacao with bold character that was also approachable. We think you will be pleased with the results. This bar's single ingredient, Oko-Caribe cocoa, is medium roasted to preserve its natural nutty character. A long conche cycle of heat and aeration softens any harsh notes often associated with pure cocoa.

Fresco is a small craft chocolate maker in Lynden, Washington. The founder of Fresco, Rob Anderson, releases several combinations of roasting and conch profiles to create different variation bars from the same beans. Anderson, originally a computer scientist, took a trip to Washington and visited a chocolate shop and took a tour which initially sparked his chocolate interest. Since then, Anderson created his own machines to make small batches of test chocolate. While only using three ingredients for his bars; cacao beans, cane sugar and cacao butter, Fresco’s flavor range is uniquely diverse. He chose the name Fresco meaning fresh in Italian, which could translate into fresh taste, fresh ideas, or a fresh approach to chocolate making.

Collection description: Öko Caribe is one of several organic cacao cooperatives in the Dominican Republic, but has managed to distinguish itself thanks to consistent high quality beans and very close relationships with all of its 165 farmers. The co-founders maintain these relationships through regular technical training in agronomic practices and organic certification, as well as interactions on a personal level in the community. Their award-winning beans are centrally-fermented in wooden boxes, and depending on the bent of the maker, chocolate made with Öko Caribe cacao could be sweet, spiced, or even fruity. All Öko-Caribe cacao is certified organic.
