Raaka is one of the few chocolate makers that does unroasted chocolate right. Not roasting the beans presents an interesting challenge to chocolate makers and the flavor is a unique departure from traditional methods. Raaka is based in the Red Hook district in Brooklyn, NY. Raaka has a great collection of unique and fun chocolate bars that are also vegan friendly and sugar free. They focus on telling stories through their bars that highlight the region where the cacao is from, the conditions they were grown in, and how it was processed. Raaka is all about a transparent trade. They ensure that receive their cacao beans through direct trade, with organizations that promote quality, sustainability and premium pricing for their farmers. Junín, Peru

Junin is a department in central Peru, smack in between the Andes Mountains and the Amazon Rainforest. Bordered in the west by the Peruvian capital, Lima, Junin has a mix of industries and climates; its agricultural & mining sectors have become integral to Lima’s economy in recent decades. Heavy metal mining and processing have begun having serious effects upon the surrounding communities, however, so agriculture is seen as having a more promising future. In Junin’s mountain valleys, farmers tend to grow local crops such as potatoes and corn, while the more tropical regions are home to coffee, precious woods, and a variety of fruit production.

CAC Pangoa

CAC Pangoa is a cacao co-op in the Junín region of Peru, with more than 700 contributing members. Pangoa originally focused on coffee beans, but in the decades since their founding in 1977, they’ve also become dedicated to preserving their land through the cultivation of cacao. With the help of the organization Conservation Cacao, CAC Pangoa is planting more & more fine flavor varietals of cacao to sustainably and safely replace their ageing coffee. These days, the cooperative only produces organic-certified Fair Trade cacao, and they’re starting to turn to it more & more as their coffee trees feel the devastating effects of climate change.

LOVE this bar!

Wow! The punch of banana flavor was strong and sweet. My bar is Tanzanian chocolate, not Peruvian, but I thought it paired well with the banana--bright and fruity at first, with surprising depth of cocoa flavor as it evolved. I could have eaten the whole bar in one sitting. I love banana & chocolate together. Would definitely buy this again!
