This recipe was the inspiration to create their line of chocolate bars. When offering their "classic" version of the 70% to friends, nothing but praises would come back. Confirming these early approvals, today this bar has been awarded 3 times internationally. They use a specific roasting profile that enhances the raspberry, banana, dried fruits and deep chocolate, that are present in their Vale Potumuju Beans.

Baiani Chocolate is a tree to bar chocolate maker in Brazil owned by Juliana and Tuta Aquino. Baianí Chocolate carries the tradition of the Pinheiro and Aquino families, who since the late nineteenth century have been working with cocoa cultivation in the region known today as the Potumujú Valley. This husband and wife pair were originally in the music industry living in New York until they revisited their families’ farms. From reliving their childhood memories being surrounded by cacao, they decided to get back into their roots and fell in love with the art of making chocolate. Through experimentation and quality testing, they have perfected the art of making chocolate that highlights the unique flavors of the cocoa they grow. Baiani is internationally known and have won awards for their quality of chocolate bars.

Bahia, Brazil

Bahia is one of the largest states of Brazil, located in the east, along the Atlantic coast. Once a monarchial stronghold dominated by slave-centric agriculture and ranching, Bahia is now a domestic manufacturing center and the focal point of Brazil’s re-entry into the fine cacao market. The region was once the largest cacao producer in the country, so reputed that a portion of southern Bahia was nicknamed “Cacao Coast.” Unfortunately, bioterrorism in the 1980’s devastated the country’s crop over the course of just a decade. In the early 2010’s, a number of family farms took it upon themselves to revitalize the local fine flavor cacao industry, which continues to grow annually.

Fazenda Santa Rita

Vale Potumujú (also called Fazenda Santa Rita) is located in Arataca municipality, in Brazil’s southern state of Bahia. The owners, Tuta and Juliana Aquino, are direct descendants of two traditional founding families of cacao farms in the state of Bahia, dating back as far as the 1890’s. Their large cacao farm is right in the middle of the Mata Atlantica, one of the rain forests with the highest biodiversity on earth. They’re proudly the growers, processors, and exporters of their own farm’s cacao, as well as the owners of Baianí Chocolate, made in the city of São Paulo. Right now the couple is also working to map the different types of endangered hardwood trees on their farm, aiming to plant over 5 thousand seedlings in the next few years.

This was a super fun 70% bar! At first sniff, it's like I just opened a jar of raspberry preserves 😋
Once you take a bit, it's like licking it off the butter knife and with a bite of dried tart cherries and banana chips 🍌 🍒
The taste lingers gently, and finishes on subtle cocoa notes like I had a glass of hot chocolate a few minutes before.

Sweet and unique

Pretty design on the bar. Smoky, leathery aroma with a slightly chalky texture (no added cocoa butter in this bar). Very sweet for a 70% bar with notes of banana and liquorice. Slight tannin on the finish.
