Goodnow Farms

Goodnow Farms chocolate is handcrafted in Massachusetts. All the cacao they use is ethically sourced from small farmers and producers that Tom and Monica have met during their travels throughout Mexico, Central and South America. The cacao is carefully stone ground, and conched in small batches. They also press their own cocoa butter for each bar. They admired the concept of single origin bars and capturing the different taste profiles, and uniqueness through each bar. They discovered their love for real craft chocolate after visiting a vintage shop in Los Angeles. Tom and Monica officially created Goodnow Farms in 2016 but have been crafting their creations since 2008. The pair works hard to engage with the communities where they receive their cacao from to ensure farmers are fairly compensated and practice sustainable farming.

Ucayali, Peru

Ucayali is a department of eastern Peru, bordered by seven other Peruvian departments and the Brazilian state of Acre. Located smack in the Amazon Rainforest, its name is derived from the Ucayali River, which runs through the northwestern part of the department. Much of Ucayali’s economy comes from the exploitation of its natural rainforest, including logging precious woods and catching rare Amazonian fish, but an increasing number of locals are turning to organic cacao farming, with an eye on the US & European markets.

Ucayali River Cacao

This central fermentary works with cacao farmers along the Ucayali River, which is outside of the city of Pucallpa, in eastern Peru. Since their inception, Ucayali River Cacao has partnered with both USAID and Alianza Peru to offer local farmers access to an alternate market in a region plagued for too long by narcotraffickers. Buying wet cacao at a premium price takes a lot of work off the farmers’ plates without taking away income, and allows the processing team to ensure even fermentation & drying of all beans. Working with a few hundred smallholder farmers, the team at Ucayali River has been able to achieve a deeply flavorful cacao, with hugely varying flavor profiles depending upon the work of the chocolate maker.

Great texture, awesome flavor

Among the 100% beans I have tasted so far, this one has the best texture. They managed to make an extremely finely ground chocolate without the associated stickiness from the fine cocoa solids. The chocolate melts rather quickly on your tongue and yields a fine and smooth buttery texture, which really beats most 100% bars I have tasted. Flavor wise, you immediately get hit with a distinct grassy note when you pop it into your mouth, a noticeable hit of lemongrass. After letting it sit for a while in your mouth you will notice a slight bitterness and dryness, with some noticeable acidity. Overall it is a great bar, a bit on the pricey side but well worth it. Definitely must try for 100% bar lovers.

Intense & rich 100%

This is a well-done 100% bar from one of my favorite makers. It has a very pleasant aroma with notes of butter, flowers, cherries, and chocolate buttercream. The flavor is intense; this is not what I would call a mellow 100% like the Pralus 100% or Akesson's Madagascar criollo 100%. It's slightly bitter, with a slight dryness, and lots of rich buttery texture with good tanginess as well. If you want something less intense try one of the two mentioned above, but if you already know you like 100%, give this a try!

There are Better Ones

Compared to other 100% chocolates we have tried, and there have been several, this was not a favorite. Nice texture (very smooth and a thin bar), but it was quite bitter.
