Usually I am a fan of darker chocolate, but I have a soft spot in my heart for this excellent dark milk bar from Bonnat. Of course even Bonnat's dark bars taste like milk bars due to Bonnat's signature creamy cocoa-butter-forward texture, but the slight milk addition really amps up the creaminess. The texture is the main story of this bar (and Bonnat's other dark milk bars). but the flavor is wonderful too. No specific notes comes forward - this is just excellent milk chocolate with an out-of-this-world texture.
This is my go to bar when stress levels begin to rise. It has a soft, but delicate flavor. Nothing overwhelming, but nothing lacking. This is one of those bars that you pop a piece in, breathe deeply, close your eyes, then let it melt slowly while humming something tranquil and thinking of a warm meadow somewhere. Perhaps my favorite dark milk bar.

Since the 1980's Bonnat has continued to pioneer the creation of single origin bars. They work with 35 different plantations around the globe to produce bars that showcase each cacao’s unique flavor. Collection title: Java, Indonesia
Collection description: The volcanic island of Java is home to over half the Indonesian population, and is in fact the world's most-populous island. It was the center of the Indonesian struggle for independence during the 1930’s and 1940’s, and the country’s capital city, Jakarta, is on its northwestern coast. Java was the first place where Indonesian coffee was grown, starting in the 17th century, and by the early 20th century, Javanese coffee had gained global popularity. Thus, the name "Java" has now become a synonym for coffee in popular culture. Unfortunately, most of the smallholder farmers tasked with growing Javanese cacao are limited to selling their crop to huge chocolate manufacturers, who pay low prices & don’t pay much attention to quality.
