The cacao that Domori selects in Tanzania comes from the Kokoa Kamili cooperative, which was set up with the aim of improving the organoleptic quality of Tanzanian cocoa. Kokoa Kamili buys "wet" cocoa directly from the local growers, in the cabossa, paying them more than what they would earn if they sold the cacao already fermented and dried. This means that the farmers are paid more, sooner and with less work. The time and effort spent on fermenting and drying the beans can therefore be spent improving the quality of the farming methods. After it is bought, the cocoa is fermented in the Kokoa Kamili fermentation centers, where its quality and processing can be constantly monitored. Fermentation takes place in wooden boxes covered with banana leaves, using a cascade system, for a period of 6 days.

Domori

Domori is a gourmet Italian chocolate maker that focuses on making bars with low production process. They use a low roast profile and medium conch (the stage in which chocolate gets its characteristic taste and mouthfeel from cacao beans) to preserve and maintain the aromas and flavors of the fine cacao beans they feature in their bars. Founded by Gianluca Franzoni in 1997, they are considered one of Europe's finest chocolate makers. Franzoni traveled to Venezuela to help develop a business model to reposition cacao but was ultimately fascinated by cacao itself. He experimented with different varieties to help preserve Venezuela’s biodiversity and even helped prevent the extinction of the Criollo beans. Domori is the first company to use the fine Criollo variety, which is considered the rarest and most prized cacao bean in the world. Their signature 100% Trinitario and unique 70% Criollo strains are an achievement that elevates cacao to a whole new level. The name ‘Domori’ comes from ‘Due Mori’ in Venetian which refers to objects of dark color. Franzoni wanted a name to portray his expressive chocolate company. Venice is considered the land of trades of spices and ideas, and its ‘Due Mori’ representing two bronze statues in the famous Piazza San Marco. Also to Franzoni, the term ‘Due Mori’ is represents two dark beans: cacao and coffee.

Cacao Region

Morogoro, Tanzania

Morogoro is a large state in central Tanzania, known for its hot & humid weather and its large game preserves. The main source of cocoa in the region comes from the Kilombero Valley, the base of a central fermentary called Kokoa Kamili, which was founded in 2012. Since its introduction ot the country in the late 19th century, cocoa in Tanzania has been almost exclusively grown by smallholder farmers, and before the entrance of Kokoa Kamili, these farmers had very little incentive to produce better cocoa.

Started in 2012 by friends Brian LoBue and Simran Bindra, Kokoa Kamili is one of the few African-origin cocoas which have been universally praised around the world. The team, which is based in Tanzania’s Kilombero Valley, has achieved a remarkably consistent post-harvest process, setting a standard in the region by buying wet beans at a premium and fermenting & drying them in a central location. This garners them an exceptionally fruity and rich cocoa, grown right in the nation’s Udzungwa Mountains National Park. Kokoa Kamili now works with nearly 3000 farmers in the region, all of whom get paid a premium immediately for their wet cacao, lessening their workload while also increasing their income.
