Kefir is milk’s victory against time. In Lithuania, there are ancient traditions of creating kefir, an authentic culinary heritage product. Kefir contains probiotics, a symbiosis of beneficial bacteria and yeast that ferments the milk. From generation to generation, the mysterious kefir grain is passed on to perpetuate this sparkling beverage. Living up to my innovative spirit, I decided to make something genuinely unorthodox by blending kefir into chocolate. Due to living microorganisms, this bar ages like cheese and flavors develop over time. How timeless is that?

Chocolate Naive

Chocolate Naive is a craft bean to bar chocolate maker in Lithuania. Not only do they source fine quality beans but they also work with local farmers and suppliers to source wild and organic ingredients that go in their chocolate bars. Naive uses modern chocolate making techniques to reveal the natural character of the cacao beans. In the tiny town of Giedraičiai, in eastern Lithuania, Domantas Užpalis creates unique chocolates blending tradition with instinct and innovation. Naive is one of just a few bean-to-bar makers across Europe. In his small farmhouse workshop, Domantas takes carefully selected beans through the labor-intensive steps to make his exquisite bars, often combining ingredients foraged from the forests nearby, milk from the town's grass-fed cows and spices from afar to realize his singular vision.

Incredibly unique

this chocolate is incredibly unique due to the addition of kefir! Kefir is quite popular in Europe and is one of my most favorite drinks!

The experience with this bar is truly personal. For me, with lactose intolerance, its flavor reminds me of unsweetened vanilla coconut yogurt, acacia honey which was one of my favorite combos with 100% cashew butter and acacia blossom. And it got all that. But I also have some skills. In my past, I learned how to produce goat cheese and ricotta. So yes thanks to the grass-fed milk powder you can associate the flavor with light cream cheese, honey, edible flowers, butterscotch, cashew butter, or macadamia nuts, or even better Nougat. Light brown caramel color and creamy texture. Fresh florals and milk chocolate scent. This chocolate bar is very delicate.
