Palette de Bine is a micro batch chocolate maker in Mont-Tremblant, Canada. Christine Blaise, the chocolate maker chooses cocoa beans from independent producers and handcrafts single origin bars in small batches. Originally trained as an architect, Blaise found her love for craft chocolate. Her eagerness and passion for understanding how things work drove her to dive into the chocolate world, and started experimenting at her home. Blaise is very hands on with every step of the way with her chocolate production. At first she was only able to produce 20 bars a week with her extremely small scale equipment, but eventually was able to produce around 200 a week! Palette de Bine has grown since and is recognized worldwide. Blaise has even won multiple awards over the years.
