Maker

Belvie Chocolate

Based in Vietnam, Belvie Chocolate is a bean to bar maker that handcrafts their chocolate bars with Belgian techniques. They source cacao from all over Vietnam, then stone grind and produce their chocolate in small batches. Their award winning chocolate also contributes to the preservation of cacao trees in Vietnam. They take the husks of the cacao as fertilizer for the trees to help maintain a green environment. Belvie uses Trinitario cacao beans only from local farmers to help restore cacao trees throughout Vietnam and mostly importantly, to help support the farmers.

Cacao Region

Dong Nai, Vietnam

Dong Nai is a province in southeastern Vietnam, located just northeast of Ho Chi Minh City (Saigon). The region is one of Vietnam's main manufacturing centers, home to a range of factories, such as a Toshiba motor plant, a PepsiCo beverage manufacturer, and a Nestlé coffee factory. Despite its success in manufacturing, Dong Nai also has a substantial agricultural sector, mainly consisting of livestock, corn, sugarcane aquaculture seafood, and much much lower in the rankings, cacao. Just prior to Vietnamese colonization, the area was dominated by the Khmer empire, until 1627.

Nice and refined firm cheese

This chocolate remind me a nice firm cheese, with a farm kinda of vibe, like hay or something like that.

Very impressive and unexpected, in a good way!

very interesting aroma and flavor

this is an interesting cacao origin: vietnam. this bar seems to express well the unique characteristics of vietnamese cacao. it's a very worthwhile purchase not only because it is objectively delicious, but because tasting the terroir will really expand your notion of what cacao can taste like. hard to describe, but the notes that come to mind for me are: tonic, lemon balm, & creme fraiche.

Good but not my favorite

The chocolate wasn’t terrible, just wasn’t my favorite. It has a weird sort of sweet flavor I haven’t found in any other chocolates
