When butter is warmed gently over low heat it bubbles and browns to a rich, toasty, nutty substance known as Beurre Noisette. The process takes butter down a dark path, a path well traveled by rum and chocolate. This deeply complex (in flavor and history) trio, go together like old friends having a good time, mingling effortlessly.
The chocolate in this bar is named "Vanua" made from cacao grown on the Mataswalevu farm in Fiji. The rum is "Dark Waters" a single barrel release by Kinsip, the small and mighty distillery in Prince Edward County.
Soma was founded by David Castellan and Cynthia Leung in 2003. A rarity in the industry, Soma are adept at both chocolate making, and also a fantastic chocolatier. At the time, ‘bean to bar’ chocolate wasn’t necessarily even a term! Anybody who knew how to make chocolate were those who worked for big chocolate companies. Soma was one of the first to tackle the micro batch chocolate bar production. Besides their wonderful line of chocolate bars, Soma also uses their chocolate to make ganache for truffles, and other chocolate treats. Soma's high quality chocolate bars have been awarded multiple times over the years. First starting off in a 400 square foot tiny corner of an old whiskey distillery, Soma now has two chocolate factories in Toronto, Canada.
This bar was crazy good. They aren't lying when they say it has a deeply complex flavor. Would definitely recommend for anyone looking to add some bars with inclusions to a lineup. It's a much brighter and sweet flavor profile than the other bars I've tried that include alcohol.

There is no diet list I will follow that would rule out CHOCOLATE! love chocolate and I can't be guilty about it because I have to taste everything for experiencing new approaches, and methodologies, for learning the development of the bean-to-bar movement. This tasting experience almost tempts you of completely ignoring what the "palate narrates" because its shocking flavors has left you speechless. See artisans like SOMA wants to make chocolate that people recognize and love to eat, sometimes with an unexpected twist of surprise and after you enjoy a "perfect square" you feel godlike, as though you can conquer any enemy, a whole armada, and all the challenges of your life. Indeed, I prefer to regard about chocolate as I would imagine the perfect soul mate.

I have now been introduced to fine chocolate. Great smooth flavor without excessive sweetness. Balanced bar. Bitterness eradicated. Melts slowly with a tantilizing blends of butter and rum. Could eat it all day. Sent as gifts with rave reviews!
