Fu Wan Chocolate

Fu Wan Chocolate (or FuWan) is a tree and bean to bar chocolate maker from Taiwan. They make chocolates from natively grown Taiwanese cocoa and from other fine cocoa bean sources from around the world. In 2011, Fu Wan originally started a resort, Warren Hsu, the executive chef at the resort wanted to provide the best local cuisine to its guests. One day he met a cacao farmer while Hsu was sourcing local ingredients and was introduced to cacao, and Hsu was immediately inspired by real tasting chocolate! With the cacao industry being relatively young, most of the cacao is being exported, making Fu Wan one of the very few makers handcrafting bean to bar chocolate with local cacao beans. Hsu has trained with bean to bar makers to share his journey of flavors through his chocolate bars. Fu Wan also believes in an eco-friendly approach. They take emptied out cacao pods, which are considered a waste product and convert them into cacao syrup. They also product cacao tea and even in the works of producing cacao paper. Warren came up with the name Fu Wan because Fu meaning fortune, blessings and happiness, and Wan means bay. Fu Wan is located near a national scenic area, hence they are from a bay full of fortune, blessings and happiness!

For me, the reason this bar won gold is because it's flavor profile is so accessible. Even to someone new to chocolate tasting. It has a low cocoa percent so pretty much everyone likes this bar. The raisin note is so bright and delightful it's easy to love!

Very Interesting Bar

This was a really complex bar. We bought a couple of them, and the flavor profiles were a little different, but overall there were really strong tastes of raisins and toffee. The snap was great, though the texture was a little rougher than we were expecting. Would definitely recommend.

Wow. This is a good one. The packaging is a lovely, well thought out little box. The bar, once released from its secondary plastic wrapping gives off a delightful aroma of balsamic vinegar. Once in the mouth it melts nicely and takes you on an epic flavor journey - first tasting notes of raisin and pecan then toffee, licorice, pineapple and cream, then finishes with a final hit of pecan and some indescribable umami. Really, really delectable.

Enjoyable milkier chocolate

I enjoyed this bar but my boyfriend did not. I found this bar to be a bit softer than others with less of a snap, and definitely tastes more like a milk chocolate than a dark chocolate. It has a very similar taste to the Taiwan #9 Ping Tung Double Ferment rough grind, but is smooth.The flavor profile I'd say is the light fruity- light in that it doesn't have the punch or acidity that some fruity flavor profiles have.
