Cacaosuyo is a "tree to bar" Peruvian chocolate maker with 100% traceability. They pay careful attention to the cacao they use at all stages from harvest, fermentation to the processing of cacao to make the best possible chocolate. Cacaosuyo is so particular about their beans to ensure the best quality that their beans are brought to dedicated labs for analysis. The cacao beans are classified by each and every strain, to detect new flavor profiles and discovering rare varieties. This is a crucial step because this allows rare varieties to become protected which would have otherwise been lost.   Owned by Eduardo Lanfranco and Samir Giha, they craft their chocolate in Lima, Peru using only Peruvian chocolate.

Piura, Peru

Piura is a department of northwestern Peru, bordered in the north by Ecuador and on the west by the Pacific Ocean. Several rivers run through the province from the region’s mountainous zones, serving to keep the coastal plantations naturally well-irrigated and productive year-round. The region is the second most-populous in the country, responsible for roughly a third of Peru’s annual petroleum production, as well as a significant amount of its mining. Similar to the rest of the country, much of Piura’s agriculture relies upon commercialized crops, such as sorghum, rice, corn, and yucca, though an increasing amount of native criollo cacao is being cultivated throughout the region.

Fruity aroma. Soft snap, silky smooth texture. Woody at first, sweet mellow citrus hits later as it melts down. Fudge brownie finish.

Unique and fruity!

The bar is unusually thick and surprisingly soft. Smelled like red wine. Hits with a burst of fruit flavor - lemon, ripe banana, and tart cherry - with a slight peppery finish and a creamy mouthfeel and nuttiness like almond butter. Great fudgy aftertaste. Very unique bar.

Now that I've found this chocolate, nothing else will do.

I love that this chocolate is just cacao solids and sugar. No emulsifiers, no cocoa butter, just pure deliciousness. I found this chocolate when I was reading about the International Chocolate awards, and fell in love. I tried to turn away from it for a while, just to cut costs, but now no other chocolate will do. It is extraordinary and unparalleled in the world of chocolate. If there's anything as good or better, I haven't tried it yet.

Lakuna does it again

A Cacaosuyo bar was my first real gourmet chocolate experience, and I have a special place in my heart for these. I didn't love this one as much as the Lakuna bar, but it was still top tier mind-blowing chocolate. It has that unique rich buttery yet ground texture that's special to Cacaosuyo, and this one had some honey and red fruit notes to me. Would buy again.
