Collection description: Coto Brus is a valley region of the Puntarenas province of southern Costa Rica, along the border with Panama. Overall, the region is quite poor, with the economy primarily based on agriculture and cattle farming; the main crops include coffee, sugarcane, corn, and plantains. Due to the relative lack of infrastructure, however, the region is also home to some ancient varietals of cacao which survived the plague of fungus which wiped out much of Costa Rica’s cacao in the 1970’s.

Collection description: Goodnow Farms chocolate is handcrafted in Massachusetts. All the cacao they use is ethically sourced from small farmers and producers that Tom and Monica have met during their travels throughout Mexico, Central and South America. The cacao is carefully stone ground, and conched in small batches. They also press their own cocoa butter for each bar. They admired the concept of single origin bars and capturing the different taste profiles, and uniqueness through each bar. They discovered their love for real craft chocolate after visiting a vintage shop in Los Angeles. Tom and Monica officially created Goodnow Farms in 2016 but have been crafting their creations since 2008. The pair works hard to engage with the communities where they receive their cacao from to ensure farmers are fairly compensated and practice sustainable farming.

Collection description: The brand of Terciopelo Farms has been in operation in the southern part of Costa Rica, near the town of San Vito, since March 2007. Owners Keli and James Carouba bought the largest cacao plantation on the Pacific side of Costa Rica, and with the help of local farmers and a world-renowned cacao expert, they’ve been able to expand the plantation with heirloom designated cacao varieties. The farm itself is incredibly beautiful, perched on a hillside and facing south overlooking the mountains. Inside its 100 acres are pastures for cattle grazing, a large area of primary forest, and fifteen acres planted with Costa Rica’s only heirloom-designated cacao.
