The lion's mane mushroom is a nootropic food used in traditional chinese medicine to improve mental acuity & memory. They are large, white, shaggy mushrooms that resemble a lion's mane as they grow. Definitely it's one of the most interesting-looking & beautiful mushroom in the world. Its flavor & texture is similar to crab or lobster meat. In this bar I detect subtle sweet savory notes (not really seafood). The tahini is predominant with its earthy nutty flavor and a tinge of bitterness. I love the creamy texture of the nut butter part of this bar. It seems like a filling truffle. This bar needs to be treated as milk/white chocolate. Why? The tahini can become unpleasant or astringent over the natural expiration time. It didn't impress me as other Primo I tried but it's still very well done. Delicate not a complex flavour profile but thick and hard texture. At the same time creamy thanks to the nut butter addiction. Toasted, earthy, sweet savory, smooth bitter finish, same watering mouth, no astringency or fruitness and as they say PARADOXICAL!

His time there, he also learned about regenerative cacao farming. Jay, a certified natural chef has extensive knowledge on therapeutic cooking. He had purchased property in Costa Rica and created strong relationships with Costa Rican cacao farmers. They decided to fuse their passions together translating into unique chocolate. Their passion and knowledge working with medicinal ingredients and their dedication to create a bridge between chocolate and people, they seek to create potent chocolate. The name ‘primo’ means ‘cousin’ and ‘best’ in Spanish but they chose the name to pay homage to the Aztec and Mayan cultures that their cacao beans come from.
