For a 100% bar, this is surprisingly pleasant! This bar is made from a blend of beans, and doesn't have any of the bitterness you'd expect from an 100% bar. It has very earthy notes, some brighter grassy notes, and a bit of nuttiness. Like the other reviewers mentioned, the bar has a natural sweetness as well. Highly recommended for those who have been to intimidated to try 100% bars.
This is a delicious bar and distinctive among 100% cacao bars, which as a group are my go-tos and favorites. The taste goes through a lot of changes as you let it warm in your mouth and chew it. Among them, but not at the beginning or end, is a brief bitter and fleeting acid phase, accompanied by many interesting and sometimes unidentifiable flavors more on the sweet dimension. It's really great. I just adore it. It finishes clean on the palate.
the flavor of this chocolate is one of the most palatable and "sweet" tasting 100% chocolates i've ever come across. so palatable, that at first i thought the label must be incorrect - there must be sugar in this bar! the venezuelan bean this chocolatier currently uses as the base for the recipe is very special. highly recommend!
