Imogene is one of our neighbors in Spencer, TN and she is famous for her out of this world cheesecakes. This collaboration bar has been a labor of love by learning her cheesecake recipe and making a dark milk chocolate bar with cheesecake.
We asked and Imogene generously and graciously taught our Pastry Chef, Riley, how to make her cheesecake recipe, which we now make regularly in house. We then freeze-dry the cheesecake, then grind it to a powder and use it to make one of the most amazing flavored bars you’ll ever experience. To top it off we grind up the graham cracker crust and use it as an inclusion to give the bar textural interest.
