Dark chocolate dusted with a mix of organic freeze-dried raspberries and organic vanilla coconut palm sugar to make a delightful berry bar. The dark chocolate is Dick Taylor's Good Food Award winning 72% Belize chocolate.

The concept behind the vanilla raspberry was to create a blend of visual and flavor elements. First of all, the almost neon pink color of the freeze-dried raspberries is the first thing you notice and is a stunning visual accent to the deep rich color of the chocolate. Flavor wise, the raspberry fills a flavor space that is absent from chocolate. The tartness of the raspberry is a stark contrast to the ripe fruit flavors in the Belize dark chocolate. The small addition of the vanilla coconut palm sugar rounds out the aroma and gives it a slight sweetness. Overall, the bar is just fun to eat, an experience engaging all the senses.

Former boat makers and carpenters, Adam Dick and Dustin Taylor were intrigued by the new and challenging trend, craft bean to bar chocolate. They started making chocolate in a 500 sq. ft. space in Arcata, CA in 2010. Their chocolate business,  Dick Taylor, quickly evolved, and grew from their love and meticulous attention to detail. Their space in Eureka, CA boast their careful craftsmanship; into an interesting appearance with sharp letterpress packaging and an intricate, pretty mold. Dick Taylor also pushes the traditional methods of chocolate making to coax the maximum “pure” flavor they can from their beans and for their single origin chocolates. They support and purchase their beans through direct trade working directing with the farmers. Most of the bars in their collection are made from only 2 ingredients. They have won multiple awards for their bars in a few short years. Dick Taylor has ventured into rare parts of the jungle to find cacao beans no one has used before. They are constantly keeping up with the demand for chocolate but never cutting any corners to always provide the best chocolate.

Raspberry Bite

A heavy chocolate with a light raspberry after taste. The pieces of raspberry add a nice textural component.

Better if chewed together rather than savored like most fine chocolates

This is not the chocolate I would pair with the raspberry vanilla. When letting the chocolate melt over my tongue (it has a good melt to it), the chocolate overwhelms the delicious fruity raspberry and vanilla (the vanilla is quite subtle) as the chocolate is very earthy (personally my least favorite taste category of chocolate). As such, I tried biting the chocolate into small pieces and tasting it all together, which is better- but lessens to burst of raspberry.

While I am not an earthy chocolate fan, my boyfriend is and he really enjoyed the chocolate, but didn't care for the raspberry dusting.
