Collection description: Dormouse Chocolates is a bean to bar chocolate maker from Manchester, UK established in 2014 by Isobel Carse. She experiments to seek unusual and rare ingredients and unique methods to offer exceptional yet micro batches of chocolate bars. Isobel had started working a seasonal job at a luxury chocolate shop, where Isobel found her love for chocolate and was granted a position as a chocolatier and has never looked back! Her mission is to create chocolate that is sustainable with clear transparency in order to provide the best quality chocolate. Isobel had intended to operate her business selling truffles instead, but the idea of bean to bar kept sparking interest, so she had purchased a small bean grinder and started experimenting. Her ideas for new flavors come based on where she gets her cacao beans from Guatemala to the Philippines. Isobel named the company after the Dormouse character from the Mad Hatter’s tea party from Alice in Wonderland, which is one of her favorite books!

Collection description: The Gaura Estate is a family-owned-and-operated 815-hectare mixed crop plantation on the island of West Sumba, Indonesia. The estate was established in 1990 with the goal of creating a best-in-class plantation which would serve to improve the livelihoods of the rural community in which it is located. The farm currently employs around 60 full-time staff who live on the plantation, and have access to a free school for their children and their own land for food crops. During harvest season, the farm employs an additional 150 workers from the surrounding villages to help with the processing of the cacao. In partnership with ICCRI, the team also operates a national cacao seedling project for farmers across the region.

The island is home to two national parks, designated for the protection of its numerous endangered species of birds, however most of the original forest has been cleared to plant corn, cassava, and other crops. Historically, the island was known for exporting fragrant sandalwood, which still grows well on its largely low, limestone hills. Cacao was brought to Indonesia hundreds of years before, but production on islands like Sumba only picked up around the 1980’s, when the crop was pushed to small family farmers.
