Dormouse Chocolates

Dormouse Chocolates is a bean to bar chocolate maker from Manchester, UK established in 2014 by Isobel Carse. She experiments to seek unusual and rare ingredients and unique methods to offer exceptional yet micro batches of chocolate bars. Isobel had started working a seasonal job at a luxury chocolate shop, where Isobel found her love for chocolate and was granted a position as a chocolatier and has never looked back! Her mission is to create chocolate that is sustainable with clear transparency in order to provide the best quality chocolate. Isobel had intended to operate her business selling truffles instead, but the idea of bean to bar kept sparking interest, so she had purchased a small bean grinder and started experimenting. Her ideas for new flavors come based on where she gets her cacao beans from Guatemala to the Philippines. Isobel named the company after the Dormouse character from the Mad Hatter’s tea party from Alice in Wonderland, which is one of her favorite books!

Fun taste from the bread

Well, I bought these as gifts that I haven’t distributed yet. But they sure look delicious!

Interesting concept, not the best execution

This bar, like other bars with butter as an inclusion, was incredibly soft and melty (with the net effect that it has the texture of butter). I've had bars like this before, and it's interesting.. I think making this a milk chocolate instead of a dark chocolate allowed the butter flavor to become a little overpowering... also, the sourdough crumbs were really hard, almost like sand.
