Dormouse Chocolates

Dormouse Chocolates is a bean to bar chocolate maker from Manchester, UK established in 2014 by Isobel Carse. She experiments to seek unusual and rare ingredients and unique methods to offer exceptional yet micro batches of chocolate bars. Isobel had started working a seasonal job at a luxury chocolate shop, where Isobel found her love for chocolate and was granted a position as a chocolatier and has never looked back! Her mission is to create chocolate that is sustainable with clear transparency in order to provide the best quality chocolate. Isobel had intended to operate her business selling truffles instead, but the idea of bean to bar kept sparking interest, so she had purchased a small bean grinder and started experimenting. Her ideas for new flavors come based on where she gets her cacao beans from Guatemala to the Philippines. Isobel named the company after the Dormouse character from the Mad Hatter’s tea party from Alice in Wonderland, which is one of her favorite books!

Tangy Chocolate at its Finest

My first impression was that this is what really fancy chocolate tastes like, there is probably no chocolate bar at the grocery store you can find to compare this to. It is a very strong taste, and has a super malty and acidic flavor profile (am I getting the bougie terms right?). Like you know the tangy feeling of a sour grape or raspberry? It's kind of like that but with chocolate. It reminds me a lot of cacaosuyo, but more intense, so if you've tried that one you'll love this one too.

Very good bar

This is a very good bar. The flavor is fruity and intense and the texture is smooth with a good snap. It is not at the very top of my list (reserved for Qantu Morropan and Patric 67% Madagascar), but it it is a good value for the price and I would order it again.
