Dormouse ChocolatesDormouse Chocolates is a bean to bar chocolate maker from Manchester, UK established in 2014 by Isobel Carse. She experiments to seek unusual and rare ingredients and unique methods to offer exceptional yet micro batches of chocolate bars. Isobel had started working a seasonal job at a luxury chocolate shop, where Isobel found her love for chocolate and was granted a position as a chocolatier and has never looked back! Her mission is to create chocolate that is sustainable with clear transparency in order to provide the best quality chocolate. Isobel had intended to operate her business selling truffles instead, but the idea of bean to bar kept sparking interest, so she had purchased a small bean grinder and started experimenting. Her ideas for new flavors come based on where she gets her cacao beans from Guatemala to the Philippines. Isobel named the company after the Dormouse character from the Mad Hatter’s tea party from Alice in Wonderland, which is one of her favorite books!

Collection description: Alta Verapaz is a department in central Guatemala, with its capital in Cobán. All of Guatemala was at one point a part of the Maya civilization, including the Alta Verapaz region, and most of the area's residents are still part of one of the surviving groups and primarily speak their native language rather than Spanish. The majority of the fine flavor cacao exported from Guatemala comes from the tropical jungles of the Alta Verapaz region via Cacao Verapaz, a specialty cacao exporter based in Cobán, and focused on working with indigenous communities to preserve their native cacao varietals.
