We've hand-selected the highest quality Organic and Fair Trade Hispaniola Conacado cacao available for this unique chocolate. Our medium roast reveals subtle notes of blackcurrant, caramel, and vanilla. Days of stone grinding achieve a silky texture. Next, the chocolate is heated, mixed and aerated, this is conching. Our medium conche step mellows each flavor note, creating a smooth blend reminiscent of caramel and milk chocolate with subtle hints of red fruit and plum. A small amount of added cocoa butter enhances the chocolate’s silky texture as it melts on your palate.

FrescoFresco is a small craft chocolate maker in Lynden, Washington. The founder of Fresco, Rob Anderson, releases several combinations of roasting and conch profiles to create different variation bars from the same beans. Anderson, originally a computer scientist, took a trip to Washington and visited a chocolate shop and took a tour which initially sparked his chocolate interest. Since then, Anderson created his own machines to make small batches of test chocolate. While only using three ingredients for his bars; cacao beans, cane sugar and cacao butter, Fresco’s flavor range is uniquely diverse. He chose the name Fresco meaning fresh in Italian, which could translate into fresh taste, fresh ideas, or a fresh approach to chocolate making.
Flavor starts a bit mild and smooth, and builds into a more acidic, tart, fruitiness. Has some rich caramel undertones which give it a delightful almost milky character. Very pleasant, and an excellent example of a classic Dominican cacao.
Like most bars I've tried sourced from Dominican Republic, this is a rather fruity one. It tastes especially of dried fruit, with notes of tea and caramel as well.
Good tasting chocolate. It didn't fully convince me but I might give their Madagascar bar a try.
It has a nice snap, silky texture...almost buttery. Cool mouth feeling as coconut oil. Floral, coconut-caramel, light cocoa scents. It starts with zapote aromas (similar to figs). It follows a smoked wood notes with hints of blackcurrant. Roasted cocoa and tobacco aftertaste. Impressive long-lasting finish of floral nuances in your nose as a good friend of a tasting tour.
