Friis HolmFriis Holm is a multiple award winning chocolate maker in Denmark. A trained chef by profession, the founder Mikkel Friis-Holm has owned a restaurant, a bakery, and then became a distributor for Scharffen Berger chocolate in Scandinavia. This passion for chocolate evolved into a deeper interest, and lead to the formation of a chocolate company in 2008. Friis Holm has a very particular approach when crafting his bars. All of his chocolate bars are kept the same, from the origin, the bean type, roast and percentage, except for one key difference during the refining process; the number of times the cocoa beans are turned. Resulting in dramatically different tasting notes in the chocolate bars. Give Friis Holm a try and taste the experience for yourself!
This is another great bar by Friis Holm. In my opinion, Friis Holm bars stand among the finest in texture and aftertaste on the market, and this bar is no exception. Compared to the Chuno Double and Triple Turned bars, I found this one to have a familiar lingering olive and raisin finish, light fruit notes of dark berry, and distinctly different woody, nutty, and smoky flavors. It's a mellow, subtle, and wonderfully balanced expression.
This bar offers a good tasting experience: voluptuously creamy, not really acidic, smoky, woody, nutty. The mix of sweet-bitter taste makes me think about clove honey or raisin and walnut. The aftertaste is spicy and bitter just like cloves or walnut skin.
This bar is astonishing. The aroma is woody and expressive, the bar itself is a beautiful mellow cacao with subtle and well layered notes of blueberry and grape and a lingering raisin + olive aftertaste. I live for that aftertaste. I also live for this bar's remarkably silky texture, the melty smoothness surpasses possibly every bar I've ever had. Additionally, it is a nice, chunky 100g which makes the price reasonable.
