Cocoa "El Castillero" consists of a blend of Trinitarians, fermented in cascading wooden boxes. They are pre-dried for 48 hours and then dried for approximately 7 days. The tasting notes that we can find in this chocolate are molasses, molasses, roasted and cooked fruit (apples) and dates.

Kaitxo is a bean to bar chocolate maker and coffee roaster from Spain. Their factory is just outside Bilboa. They have a unique style of chocolate making with most of their finished bars having a slight crunchy rough texture that adds a unique dimensions to chocolate tasting.

Río San Juan, Nicaragua

Río San Juan or the San Juan River is a 119-mile-long river that flows east out of Lake Nicaragua, into the Caribbean Sea. A large section of the border between Nicaragua and Costa Rica runs on the southern bank of the river, though both countries have signed a treaty assigning the body of water to Nicaraguan territory. El Castillo, a village along the river, is famous for its colonial-era fort and small chocolate factory, which uses cacao from a nearby award-winning cooperative.

Easy Eating 75% Bar

While this bar is a 75% it's surprisingly sweet which would be a great option for someone who wants to begin exploring higher % bars. I get lots of vanilla in the nose and taste (even though there is none added) along with cocoa, mild earthy and light coffee notes. Tasty!

Smooth, Almost Coconut flavor

We absolutely loved the flavor of this chocolate. It didn't have any bitter notes, but rather tasted like it had hints of coconut or butter. The texture was also very smooth. A nice chocolate overall
