These beans come from the Sierra Madre de Chiapas, in the north of the province of Chiapas in Mexico. They come from the agroforestry system which goes from the mountainsides to the lush plains with a great diversity of species: peppers, peanuts, spices, various trees. Hasnaâ has taken special care in the transformation of these beans to best reveal this sweet and harmonious chocolate, very cocoa, with sweet notes of tobacco and licorice stick, slightly herbaceous, deep and complex on the palate.

These beans were carefully selected, then they were sorted by hand, roasted, crushed and conched in their workshop located rue Fondaudège in Bordeaux in the purest tradition of “Bean to Bar”.

2019 Harvest

Tasting Notes: Dense and firm chocolate, slightly tannic with intense black notes (dried fig), with a fresh and tangy, vanilla blossom finish.

La Fèverie by Hasnaâ Chocolats is the bean to bar chocolate line from are born of one young couple’s all-consuming passion for cocoa. It is a passion that led Hasnaâ Ferreira to change careers and become a chocolatier and confectionary maker.  Hasnaâ studied under a series of Meilleurs Ouvriers de France chocolatiers (Serge Granger, Bruno Le Derf, Philippe Parc and Pascal Brunstein, to name but a few). Situated on rue Fondaudège in Bordeaux, “La Fèverie” is Hasnaâ Chocolats Grands Crus’ Bean to Bar workshop. Beans for their chocolate are carefully selected for their aroma and flavor. Hasnaâ being a staunch purist, the La Fèverie chocolate bars is only two ingredients - no added flavors or any added cocoa butter.
