Tingo María is a city on the Huallaga River in central Peru, set between Andean highlands and Amazonian jungle. It's the gateway to the biodiverse Tingo María National Park, known for Sleeping Beauty, a mountain shaped like a reclining woman.

LetterPress ChocolateLetterPress Chocolate was cofounded by David and Corey Menkes in Los Angeles, CA. They founded LetterPress with the purpose of paying cocoa farmers a a premium for quality, sourcing their cacao through direct trade, and working with partners such as Uncommon Cacao, Meridian Cacao. Quality above quantity with as few ingredients as possible to make the best chocolate possible is their mission. On the inside flap of every bar is their favorite quote from Benjamin Franklin: “The bitterness of poor quality remains long after the sweetness of low price is forgotten.”
Cacao Region
Ucayali, PeruUcayali is a department of eastern Peru, bordered by seven other Peruvian departments and the Brazilian state of Acre. Located smack in the Amazon Rainforest, its name is derived from the Ucayali River, which runs through the northwestern part of the department. Much of Ucayali’s economy comes from the exploitation of its natural rainforest, including logging precious woods and catching rare Amazonian fish, but an increasing number of locals are turning to organic cacao farming, with an eye on the US & European markets.

Ucayali River CacaoThis central fermentary works with cacao farmers along the Ucayali River, which is outside of the city of Pucallpa, in eastern Peru. Since their inception, Ucayali River Cacao has partnered with both USAID and Alianza Peru to offer local farmers access to an alternate market in a region plagued for too long by narcotraffickers. Buying wet cacao at a premium price takes a lot of work off the farmers’ plates without taking away income, and allows the processing team to ensure even fermentation & drying of all beans. Working with a few hundred smallholder farmers, the team at Ucayali River has been able to achieve a deeply flavorful cacao, with hugely varying flavor profiles depending upon the work of the chocolate maker.

It is one of my favorite chocolate! The taste is so unusual and flavorful! And it is not very sweet. So subtle a flavor!
