This bar comes from the Cho Gao district of the Tien Giang province in the southern region. Most Vietnamese cocoa tends to be rich and spicy, making the 70% bar taste stronger than it really is. They find it to be a somewhat heady mix of dark fruit, honey and sandalwood. The flavor is so different, that it is hard to forget.

Maker

Marou Chocolate

Marou Chocolat was started by two Frenchmen Samuel Maruta and Vincent Mourou in Saigon. After a camping trip in Vietnam, that left them venturing onto a cacao farm, they were sold on their next adventure, chocolate. They only had minimal everyday kitchen appliances at the time and started testing how to make chocolate in Sam’s kitchen. They work closely with farmers and slow roast the beans in small batches to get the natural flavors from its terroir and let it do all the work. They are the first bean to bar Vietnamese chocolate makers. Their bars captivate flavors from each region they receive their cacao beans from.

Cacao Region

Tien Giang, Vietnam

Tien Giang is one of the southernmost provinces of Vietnam, located just south of Ho Chi Minh City in the Mekong Delta region. Within Vietnam, the province is famous for its large and varied agricultural sector, home of the headquarters of several large fruit brands and producer of nearly 1.5 million tons of fruit each year. Tourism is important to the region, but the local government is aiming to look beyond the lush rice paddies to develop the land further over the next decade, exploiting every bit of greenery they can.

Family favorite!

This bar is absolutely wonderful. My kids who aren't big fans of fruity chocolate have this bar as a favorite. The melt is the good kind of slow. You are hit in the beginning with the strongest taste of honey that you would swear it's an ingredient. Then as it continues to melt, rich spices come through. Cinnamon, clove and cardamom. It tastes a little sweeter than a 72% and has just the right amount of acidity. Overall a fantastic bar!

subtle and sweet

I find Marou's flavors subtler and smoother than Belvie's, which tend to be sharper and spicier. I actually find I prefer Belvie because I like how the aftertaste lingers & clings to my palate more. But Marou is wonderful if you prefer a subtler flavor. Very little bitterness or astringency. The 70% Tien Giang bar is a touch earthy, a touch floral, and I agree with Michelle about the honey flavor. The texture is thick, not too hard and not too soft. Well-crafted bar.
