Costa Esmeraldas is a relatively young family-owned, single estate farm that is operated entirely by the Salazar family. Located in the Esmeraldas province of Ecuador, a region not traditionally known for fine flavor cacao, the farm has reclaimed land once occupied by cattle pastures. The Salazars have collaborated with cacao expert Dan O’Doherty on the farm design and the post harvest facility.

Monsoon Chocolate maker Adam Krantz imports cacao from Peru, India and Ecuador and combines them with local ingredients in Arizona to make a delightful selection of chocolate bars and confetions. We are pleased to feature his beautifully wrapped bean to bar collection. Krantz and his team have won a multitude of chocolate awards, and was recently named as one of Food & Wine's Best Chocolate Shops in America list.

Located in the coastal Ecuadorian province of Esmeraldas, this family-run estate has experienced a complete turnaround in recent years. After nearly a decade of their farm just scraping by through selling produce into the commodity market, in 2015 the Salazar family took on the project of completely revamping the 100-hectare farm. This included adding a complete post-harvest processing facility on-site, which is now managed by Freddy Salazar, the youngest sibling in the family. Management of the cacao orchards create over 40 full-time jobs within the local community in rural Esmeraldas, while the fine flavor neo-nacional beans they grow are now used by over a dozen chocolate companies around the world. Makers favor it for its strong base notes of cocoa, roasted nuts, and light fruitiness, with almost no astringency or bitterness.

magic

Monsoon knows what it is doing. Every bar I have had from this small maker is exquisite. This one melts in your mouth with complex flavors. Stop at one piece-- I dare you (and I'll take the rest!).
