PucheroPuchero, started as a coffee roaster and then grew to include their passion for making chocolate. The co-founders Paloma and Marco, from Spain and Italy respectively created Puchero in 2015. Their roastery and chocolate factory is in the outskirts of Madrid. Three years later in 2018 inspired by the infinite nuances of cacao from around the world, they started making chocolate from cocoa beans that have been harvested and dried on the farm by small-scale producers.

Davao, PhilippinesOne of the smallest big cities in the Philippines, Davao City is affectionately known as both the cacao and durian capital of the country. In fact, often you'll see both fruit trees growing on the same plantations within city limits, yet due to large soil & cacao varietal differences, you'll find that the resulting chocolates taste nothing alike. The region is so widespread that there's even a citywide speed limit that makes a trip from one end to the other take nearly two hours without traffic!
The bar was a little chewy in texture, yet it allowed some of the nuanced flavor to emerge more slowly. What came through was a delightful caramel with a bit of bourbon drifting around my tastebuds.
Every puchero bar I've tasted has been top notch. Love it. I would eat this chocolate all the time.
