Puchero

Puchero, started as a coffee roaster and then grew to include their passion for making chocolate. The co-founders Paloma and Marco, from Spain and Italy respectively created Puchero in 2015. Their roastery and chocolate factory is in the outskirts of Madrid. Three years later in 2018 inspired by the infinite nuances of cacao from around the world, they started making chocolate from cocoa beans that have been harvested and dried on the farm by small-scale producers.

SO very buttery

I was absolutely shocked by how buttery this bar is. The texture is almost that of butter, so our group was very polarized on whether we loved or hated it. Definitely worth trying!

Amazing texture, but too salty.

The texture of this bar is something between fresh Model Magic right out of the package, slightly softened butter, and a bar of fudge. It has virtually no snap; I choose to enjoy this bar by portioning it off with the side of a fork.

Personally, I very much enjoy the texture; however, the taste leaves something to be desired. The chocolate itself DOES have "cacao fruity smoothness", but any further complexities of flavor are lost in the overwhelming flavor of salt. That is, upon placing this chocolate into the mouth, one will note the extreme smoothness of the chocolate and a top note of salt rather than fruit. The saltiness lingers. The fruit is present but not easily detectable at first—at least, not to me.
