Seligo Chocolate is the first of its kind "bean to cube" portioned raw Modica style chocolate. This experience is carefully created by traditional Sicilian PGI Modican chocolate maker Donna Elvira. What is Modica chocolate? Modica chocolate is a Sicilian style of chocolate making that has its roots in ancient Aztec, where the process of making chocolate is characterized by maintaining a low temperature. According to Sicilians this cold process maintains all the beneficial properties of cocoa. Only raw sugar is added with no additional ingredients, and no added cocoa butter. This results in an unrefined chocolate that has a peculiar crunch/rough texture. We love it!

Tumaco, Colombia

Tumaco is a port city & municipality in the Nariño Department, on the Pacific Ocean side of coastal Colombia. It’s located less than 30 miles from the border with Ecuador, and enjoys a year-round tropical rainforest climate, even on the region’s many beaches. Most of the residents of Tumaco are Afro-Colombian or indigenous peoples, many of whom rely upon agriculture to make their living; largely in either rice, oil palm, or cacao.

Not very salty, very subtle, unlike other salt chocolates- fantastic. Packaging is good for "on the go" since the metal tin ensures no mess if melted. The chocolate is similar to Taza chocolate: unrefined = grittier, you'll see whole sugar crystals. IMO this actually increases the notes of the cocoa. Pretty sure these are just chocolate chips though lol
