Part of Cacao Fiji’s industry revitalization project, Matasawalevu Cacao Farm is a relatively small estate in the north of Fiji’s second-largest island, Vanua Levu. It’s there that farmers use traditional Fijian farming techniques to maintain and grow cacao, which was brought to the islands back in the 1800’s. The farm is one of a few run by Cacao Fiji, an organization headed by Anik Khan, who grew up on the islands, with the purpose of bringing back the Fijian cocoa sector as a serious export business for the islands. Cacao from this particular estate is very smooth, often a bit nutty and sweet, depending on what tones the maker coerces out of it.
