The Rayen Cooperative was established in 2016 in the region of Soconusco, in southern Mexico. The area was one of the main cacao-producing regions for the Aztec empire, and its quality was considered to be the highest in the colonial Spanish empire. Members of Rayen Cooperative are devoted to the rescue of the heirloom varieties of local cacao, which date back to several millennia BC. Although they’re still producing on a relatively small scale, Rayen’s work is a hint at what’s to come in the cacao-producing regions of southern Mexico, which are still working to get back up to their full potential.
