Apurímac is a predominantly Quechua-speaking department in the Andean region of south-central Peru. The population of just under half a million residents is primarily rural, depending upon agriculture, the service industry, and a small-but-growing mining industry. Apurimac’s average altitude is quite high, at just over 9000 feet, so the climate is generally temperate; most farmers depend upon native crops, like potatoes, quinoa, and corn.
