Sur Del Lago is unusual in that it’s more of a cacao origin type than a cacao strain. Over the centuries, the type “Sur Del Lago”— which translates as “south of the lake”— has evolved as a micro-origin within Venezuela, referring most often to cacao from the region southwest of Lake Maracaibo, near the border with Colombia. The blend of different criollo-influenced native varietals that grow there have been isolated enough that they’ve come to be one of the most highly-prized Venezuelan origins out there. True Sur Del Lago cacao has a high proportion of white beans (indicative of its criollo heritage), and a very nutty character with high potential for complexity.
