FrescoFresco is a small craft chocolate maker in Lynden, Washington. The founder of Fresco, Rob Anderson, releases several combinations of roasting and conch profiles to create different variation bars from the same beans. Anderson, originally a computer scientist, took a trip to Washington and visited a chocolate shop and took a tour which initially sparked his chocolate interest. Since then, Anderson created his own machines to make small batches of test chocolate. While only using three ingredients for his bars; cacao beans, cane sugar and cacao butter, Fresco’s flavor range is uniquely diverse. He chose the name Fresco meaning fresh in Italian, which could translate into fresh taste, fresh ideas, or a fresh approach to chocolate making.
Cacao Estate
ABOCFAThis farmer cooperative is based in southern Ghana, and is known for producing the highest quality traceable cacao in the region. It’s one of the cacaos imported by Uncommon Cacao, a US-based cacao distributor. ABOCFA’s beans are different from most specialty cacao origins in that they aren’t centrally fermented in one location, as The Ghana Cocoa Board doesn’t permit the sale or purchase of wet cacao. ABOCFA’s network contains 13 communities of farmers, each of which has three representatives who report directly to the ABOCFA cooperative leadership for annual general meetings. The cooperative also democratically decides where quality and Fair Trade premiums go every year. Their cacao has a classically fudgy and rich flavor, chocolaty without being bitter or astringent. Ghana is known for a fudgy flavor profile, and that’s exactly what this bar has. Deep, dark, fudgy chocolate in a mellow, not-to-sweet bar. I had to stop myself from eating the entire bar at once. It’s so good that it needs to be savored, but it’s so good that it’s hard to stop eating it. No doubt—this bar would make the perfect brownies. Sadly, I at it all. I received this as part of the monthly club, and I plan to buy it again. Maybe next time, I’ll get to make those brownies!
