Passion fruit is one of Brazil's most beloved fruits. With this in mind, they decided to bring to the world of pairing the most exotic flavors, the opportunity for this wonderful fruit and our chocolate to meet.

The most appropriate percentage for the balance of flavors was 65% cocoa from their single origin Vale Potumuju and the passion fruit flavors are combined with a crunchy texture resulting from the demerara sugar caramel mixed with the dehydrated passion fruit pulp.

This bar was inspired by their Easter egg that won silver in the 2022 best eggs competition by Caderno Paladar do Estadão.

Baiani Chocolate is a tree to bar chocolate maker in Brazil owned by Juliana and Tuta Aquino. Baianí Chocolate carries the tradition of the Pinheiro and Aquino families, who since the late nineteenth century have been working with cocoa cultivation in the region known today as the Potumujú Valley. This husband and wife pair were originally in the music industry living in New York until they revisited their families’ farms. From reliving their childhood memories being surrounded by cacao, they decided to get back into their roots and fell in love with the art of making chocolate. Through experimentation and quality testing, they have perfected the art of making chocolate that highlights the unique flavors of the cocoa they grow. Baiani is internationally known and have won awards for their quality of chocolate bars.

Bahia is one of the largest states of Brazil, located in the east, along the Atlantic coast. Once a monarchial stronghold dominated by slave-centric agriculture and ranching, Bahia is now a domestic manufacturing center and the focal point of Brazil’s re-entry into the fine cacao market. The region was once the largest cacao producer in the country, so reputed that a portion of southern Bahia was nicknamed “Cacao Coast.” Unfortunately, bioterrorism in the 1980’s devastated the country’s crop over the course of just a decade. In the early 2010’s, a number of family farms took it upon themselves to revitalize the local fine flavor cacao industry, which continues to grow annually.

This is a good bar. Nice punchy tang from the passionfruit, balanced by the dark chocolate.

I loved this bar. The passion fruit makes this both tart and sweet. There are even passion fruit seeds to crunch on inside. Would buy again
