This chocolate is made with a blend of our cacao nibs that are aged in High West Distillery bourbon whiskey barrels for several months. This process provides subtle notes of the charred, white American Oak and light hints of bourbon whiskey. We found that aging the nibs in a fresh whiskey barrel has an interesting affect on the final flavor of the chocolate. This is by no means a whiskey flavored chocolate, but the flavor of the whiskey is detectable. What really stands out is the "mellowing" effect of the oak whiskey barrel. The chocolate tastes a bit "softer around the edges" and has a pleasant aroma and aftertaste. Due to this unique aging process, this chocolate is extremely limited. High West is one of our local whiskey distilleries in Park City and is the go-to whiskey for those who want a little taste of the high mountain west.

Ritual Chocolate

Ritual Chocolate, based in Utah, owned by Robbie Stout and Anna Davies are masters at balancing sugar and cacao. This sophisticated chocolate maker only uses those two ingredients to make their chocolate, with no added soy, butter or vanilla. We appreciate Ritual for their purposeful variations in cacao percentage from harvest to harvest to produce the best tasting chocolate. Ritual is crafted on European methods with an American style. Their journey began back in 2008 in Boulder, Colorado, both cyclists, they noticed that both coffee and cycling companies focused on cyclists. They wondered why and sampled over 20 different cups of coffee with an expert. Robbie was surprised to learn how every cup tastes different due to the roast and where it was grown. From there they learned about terroir and thought well, everyone is doing coffee; why not chocolate! They already ate a little pieces of chocolate every night after dinner, it was their ‘ritual’. Robbie and Anna spent the following years in Costa Rica after taking ownership of an old chocolate factory. They meticulously studied the craft of chocolate, reading every manual on machinery and everything in between. Their attention to detail and dedication has really demonstrated through their award winning chocolate bars.

Ritual Bourbon

This is one of the first bar I purchased on Bar & Cocoa and it is also one of my favorite of all time. I also support barrel aged method rather than inclusion. I find it less invasive giving just the right sophisticated touch to the chocolate flavor profile. The "whiskey" aroma and flavor is subtle yet distinctive. The only side notes for me is the cacao blend. I prefer inclusion/barrel-aged matched with a specific origin!

Absolutely Divine!

If you like the way that chocolate and liquor tastes can go together SO WELL, then this is a bar that you need to try. You can definitely taste the whiskey in this bar. Where other whiskey bars can leave you wondering where the whiskey flavor was, it’s definitely here, but doesn’t overpower. Ritual chocolate is some of my favorite and they did an excellent job of processing this bar to complement their chocolate. The smokey oak flavors and honey notes of the chocolate come through quite nicely.

Bourbon flavors beautifully compliment the chocolate

I am very hesitant to try any kind of flavored bars, because so often the additions overpower the cacao itself. Not so here, where the barrel aging contributes wood and vanilla complexity without losing the richness and bright lemon notes of the chocolate. Rich and satisfying, highly recommended. I gave this as a gift and it was well received - classy and perfect for Father's Day, birthdays, etc.

Good Chocolate

Tastes really good in terms of chocolate, only a hint of the barrel flavor, wanted more of that. It still tastes like good quality chocolate.
