This is Baiani's most intense bar. Its high percentage pays homage to the "88 butterfly," also known as the Diaethria Clymena, native of the Atlantic Rainforest. It landed on the makers' drying tunnel just as they were discussing the desire of making a bar with higher content of cacao. It was only in 2019 that they were finally able to get a cocoa blend with enough complexity and sweetness that they could make a delicious high-percentage bar. This blend carries notes of pure cacao, chocolate, dried fruit, and bananas, a result which inspired them to keep on searching for new recipes, even when it seems difficult.

Maker
BaianiBaiani Chocolate is a tree to bar chocolate maker in Brazil owned by Juliana and Tuta Aquino. Baianí Chocolate carries the tradition of the Pinheiro and Aquino families, who since the late nineteenth century have been working with cocoa cultivation in the region known today as the Potumujú Valley. This husband and wife pair were originally in the music industry living in New York until they revisited their families’ farms. From reliving their childhood memories being surrounded by cacao, they decided to get back into their roots and fell in love with the art of making chocolate. Through experimentation and quality testing, they have perfected the art of making chocolate that highlights the unique flavors of the cocoa they grow. Baiani is internationally known and have won awards for their quality of chocolate bars.

Not sure what to say, this just was not a good chocolate bar. Very bland, boring, burnt toast, burnt hay. Not sure how this got a Bronze award. To each their own.
Creamy and smooth on the tongue with a fairly mild flavor profile. Hint of bitters.
