These beans come from the Tumaco region of Colombia with the help of two organizations. Cacao de Colombia encourages local cacao diversity by working with farmers to cultivate regional cacao, and then they buy their beans to ferment and dry. Uncommon Cacao connects the beans with chocolate makers willing to pay a premium for high-quality beans.

Maker
Dandelion ChocolateDandelion is a small batch chocolate maker in San Francisco. Todd and Cameron, the founders have maintained an uncompromising quality with their sourcing, processing, and quality to produce great tasting bars. You'll notice that the majority of their bars are 70% with is done on purpose, so you can taste the unique difference each cacao from different countries have to offer. Both Todd and Cameron were tech geniuses located in Silicon Valley, where they started building their own chocolate equipment in their basement. Right in the middle of the craft chocolate movement starting to take over the country, they decided to tackle the adventure for themselves. Todd and Cameron wanted to produce high quality chocolate bars using only simple ingredients. Today, Dandelion produces over 12,000 bars monthly, and it’s still not enough to meet the demand for this great chocolate maker. Dandelion’s shop also boast wonderful variety of baked goods, hot chocolate and even daily tours of their chocolate factory.
Cacao Region
Tumaco, ColombiaTumaco is a port city & municipality in the Nariño Department, on the Pacific Ocean side of coastal Colombia. It’s located less than 30 miles from the border with Ecuador, and enjoys a year-round tropical rainforest climate, even on the region’s many beaches. Most of the residents of Tumaco are Afro-Colombian or indigenous peoples, many of whom rely upon agriculture to make their living; largely in either rice, oil palm, or cacao.
Not my favorite bar from dandelion.
I love this bar! If I was craving a dark chocolate cake or brownie this bar would hit the spot for dessert! It also has notes of white grape and lightly floral that keep add a nice flavor balance to the richness. I also get notes of coffee, fig and even subtle sweet tomato! Yummy bar!
At first taste, a pleasant earthy note comes through. After a moment of melting and mingling, ashy coffee and molasses. Then, the fudgey, nutty notes come through, followed by spices (we got licorice-y notes). We noticed that the vanilla comes out more when you bite into a square straight-away, so choose your own adventure! The aftertaste was mineral-y, and a touch bitter. Overall, super interesting and delicious in flavor, mouthfeel and particle size on the palate.
Deep, earthy liqueur aroma. Tastes of chocolate liqueur, vanilla ice cream (as in label tasting notes), and walnut. Has a little menthol coolness on the tongue. Really delicious!
